It is a new week and a new month! Welcome to July! This week I’m using black beans. I used canned in all my recipes, but you can always use an equal amount of cooked dry beans. For the first recipe of the week, I made a black bean salad. It is similar to the one from yum and yummer (link here), but simpler. I made up this recipe and you can find all the details below.

This is a delicious bean salad for lunch or dinner. It takes about 15 minutes to prepare which is great for a busy weeknight too. It’s so easy to have a side dish that is full of colour, flavour and texture.

Spinach and Ricotta Cannelloni

Mmm mm mm – spinach and ricotta is a classic combo which makes my mouth water every time 😋 And I finally found cannelloni tubes in our local supermarket so I’ve been desperate to make this!

I took inspiration from a several different online recipes so this one is a bit of a mish-mash, but truly yum!

Have a go and let me know what you think! The recipe below serves two people and takes just under an hour from start to finish.

Ingredients

Cannelloni filling:

  • 250g ricotta
  • 120g spinach, wilted and water squeezed out, chopped
  • 1 egg
  • 1/6 cup parmesan
  • 1/2 cup of grated cheddar (or any other cheese you like!)
  • 1 garlic clove finely chopped
  • Salt and pepper
  • Freshly grated nutmeg, just a sprinkle

Tomato sauce:

  • 1 can chopped tomatoes
  • Handful of basil, chopped
  • 1 red onion

MEDITERRANEAN CHICKEN

A one-pan, easy weeknight recipe the whole family will love!

Ingredients

  • 6-8 pieces of chicken
  • 1/3 cup olive oil
  • 4-6 garlic cloves, minced
  • 1 tbsp parsley
  • 1/2 cup sliced black olives
  • 1/3 cup red wine
  • 2 14 oz. cans diced tomatoes
  • 2/3 cup feta

Preparation

  1. Heat oil in pan. Add garlic and sauté until fragrant, about 1 minute.
  2. Add chicken and cook until they turn a golden brown.
  3. Add parsley, red wine, olives, and diced tomatoes. Simmer for approximately 15 minutes.
  4. Sprinkle feta over the top and simmer, uncovered, for approx. 5 minutes.

Quick and Easy Spinach Ramen

This quick and easy spinach ramen takes advantage of ingredients that are already in most pantries. It takes 10 minutes, is filling, flavorful and full of minerals and vitamins.

Ingredients:

1 inch of ginger
1 jumbo garlic clove
1/2 medium onion
2 generous handfuls of baby spinach
1/2 tomato
1/2 lime
1 tablespoon oil
1 ramen packet (toss out seasoning
salt and pepper to taste

Directions:

  1. Grate garlic and ginger, set aside
  2. Chop onion, set aside
  3. Chop tomato, set aside
  4. Heat oil in skillet at medium high
  5. Add garlic, ginger and onion, and saute about one minute or until it changes color
  6. Add baby spinach and saute until spinach changes color
  7. Add tomato and saute until all veggies are at desired doneness
  8. Squeeze in lime juice
  9. Salt and pepper to taste
  10. Prepare ramen packet according to directions, but toss seasoning packet
  11. Serve spinach mixture over ramen

Creamy Spinach Enchiladas

Ingredients

  • 1 tablespoon margarine or butter (we used butter)
  • ½ cup sliced green onions
  • 1 (9-oz.) pkg. Green Giant Frozen Spinach, thawed and well drained (The original recipe calls for that brand but we used another brand and it didn’t make a difference.)
  • 1 cup small-curd cottage or ricotta cheese (we used whole milk ricotta cheese)
  • ½ cup sour cream
  • 6 oz. (1 ½ cups) shredded Monterey Jack cheese (we used 2 cups of Pepper Jack cheese)

Winter is here, again! And this time I am at a place where neither I can grow vegetables, nor can I prepare my favourite soup. So I thought why not write about it to revisit one of my most cherished recipes. I prefer this whenever either of us feel sick. Best for throat/chest infection, cough, cold, fever. I prepare this even when no one’s sick, I love this soup so much. Since I am a flag bearer of healthy eating, all the main ingredients come from my organic kitchen garden, prepared in pure ghee, which also comes from my kitchen.
